Greece is not a last-minute country any more. The properties worth the flight take their summer bookings in winter, and the best rooms rarely reach the open market at all.

But small hotels turn over late. The season ends early on the islands without an airport, and this stretch of the year is when a cancellation quietly becomes somebody's trip. These are the seven I would send you to right now.
